Spanish country salad

INGREDIENTS
  • 150 gr green and black OLIVES FROM SPAIN (pitted)
  • 5 - 6 pcs medium size potatoes
  • 4 pcs tomatoes (quartered)
  • 1 pcs onion (grated or very thinly sliced)
  • 1 pcs green bell pepper
  • 3 pcs eggs (hard boiled, peeled and quartered)
  • 1 tin tuna fish (optional)
  • 5-6 tbsp extra virgin olive oil
  • 3 tbsp apple cider or white vinegar
  • 1 tsp oregano
  • Salt and pepper to taste
  • 150 ml water

PREPARATION
  • Bring water to boil. Add the full potatoes (with the skin) and let them boil for about 15 min till they are cooked. Drain them and let them cool down.
  • Peel the potatoes and dice them into 1 inch pieces. Place them in a large bowl.
  • Add the chopped tomatoes (1 inch pieces), the chopped or grated onion, the green and black olives, the tuna fish (optional), the chopped green bell pepper and the chopped hard boiled eggs.
  • Prepare the dressing in a small bowl: mix the extra virgin olive oil, the vinegar, the oregano, salt and pepper. Whisk them and mix them into the salad.
  • Refrigerate for 15 min and serve.
